Easy Peasy Summer Cooking!!

3 Slow Cooker Faves

Summer or winter, the slow cooker is a family lifesaver! If you're like me, the last thing you want to do when you come home from work, is cook a hot meal when it's already 90° outside. Pop a meal into the slow cooker, in the morning, and come home to an already prepared hot meal!

Here are just 3 of my favorite tried-and-true recipes:

5 Ingredient Chicken & Stuffing

(I just cook for 2, so I cut the following ingredients in half😊)

8 frozen, skinless, boneless chicken breasts
2 cups shredded cheese
2 cans cream of chicken soup
2 boxes stove top stuffing
3 Tbsp of butter

Spray non stick spray into your slow cooker. Place in the chicken breasts. Sprinkle with the cheese. Cover with cream of chicken soup. Cover all of that with the uncooked stove top stuffing. Randomly place the butter chunks on top. Cook on low 7-8 hours. Yummy! This looks like a pile of doody, but my teenager said it's one of his favorites! 😀

Beef Stew

4 lbs boneless beef chuck-2 inch pieces
½ cup flour
Salt & Pepper
¼ cup olive oil
Small red or white onion, chopped (or ½ of a large)
Garlic clove, chopped
1 Tbsp tomato paste
1 cup dry red wine
2 cups beef broth
4 medium carrots, peeled & sliced ¼” thick
8-10 red potatoes, sliced in half or quartered

Put flour, salt and pepper, and meat in large Ziploc bag. Shake to coat meat evenly.  Brown the meat in a skillet and then place in slow cooker. Using the same skillet, cook onions til soft (5 min), add garlic, tomato paste, and wine. Simmer for 10 minutes. Pour over meat, in slow cooker. Add broth, carrots, and potatoes. Cover and cook on low for 8 hours. Enjoy! 😊



Pot Roast OR Pork Roast

Depending on your mood or menu plan, pick either a nice Chuck or rump roast or a lean pork roast.

Roast of choice
Lipton onion soup mix
1 can of coke, Pepsi, or Dr pepper
Onions and potatoes, chopped

Place the roast in the slow cooker. Place the onions and potatoes around the roast. Sprinkle a packet of Lipton onion soup mix over the top. Pour at least ¾ of the soda can over the roast (the goal is to have the soda come ½ way up the side of the roast, but not cover it). Cook on low 8-9 hours and this seasoned roast will fall apart and be so juicy! Yummy! 😀 (Also good with mashed potatoes and you can make gravy from the juices).


There are so many soups and casseroles that I love too, but I'll save those for autumn/fall time.😘
