Easy Peasy Summer Cooking!!

Image
3 Slow Cooker Faves Summer or winter, the slow cooker is a family lifesaver! If you're like me, the last thing you want to do when you come home from work, is cook a hot meal when it's already 90° outside. Pop a meal into the slow cooker, in the morning, and come home to an already prepared hot meal! Here are just 3 of my favorite tried-and-true recipes: 5 Ingredient Chicken & Stuffing (I just cook for 2, so I cut the following ingredients in half😊) 8 frozen, skinless, boneless chicken breasts 2 cups shredded cheese 2 cans cream of chicken soup 2 boxes stove top stuffing 3 Tbsp of butter Spray non stick spray into your slow cooker. Place in the chicken breasts. Sprinkle with the cheese. Cover with cream of chicken soup. Cover all of that with the uncooked stove top stuffing. Randomly place the butter chunks on top. Cook on low 7-8 hours. Yummy! This looks like a pile of doody, but my teenager said it's one of his favorites! 😀 Beef Ste...

FishTacos

Ever have a craving for a fish taco, but don't wanna get out of your jammies and run to the nearest yummy Mexican restaurant? This was me yesterday. So I made the quick and easy dish at home and thought I'd share the recipe with you.  Seasoned tilapia is my favorite. I've tried everything, even unseasoned tilapia, but nothing beats the seasoned or spicy tilapia which I purchase either at Fred Meyer or Costco. I cook it on the stove, with a little butter, for 12 minutes. Flip once after 6 minutes.  Chop up any veggies you'd like. I used the freshest tomato and green onion. I heat up the tortillas in a fry pan with a little oil, flipping once so it's hot and just the slightest brown. Spread with sour cream, add the fish, veggies, and some grated cheese. Roll and enjoy!  It's easy and tastes so yummy! Let me know if you try it and what you think. Also, I'd love to hear your own fish taco recipes. Enjoy!  Until next time! 😊 Follow me on...

"MIDLIFE IS AN UNRAVELING....."

Good Monday everyone! I thought I'd check in and see if you are enjoying reading "The Gifts Of Imperfection", by Brené Brown.  I have been busier than a cranberry merchant, so I haven't finished it yet, but I am loving it and highlighting quotes as I go. It is definitely a book for everyone, no matter where you are in your life. "People may call what happens at midlife 'a crisis', but it's not. It's an unraveling--a time when you feel a desperate pull to live the life you want to live, not the one you're 'supposed' to live. The unraveling is a time when you are challenged by the universe to let go of who you think you are supposed to be and to embrace who you are." -preface xii and xiii. This one sentence is moving to me. I read it over and over again...This is how I've been feeling, but unable to put in the correct words. As my kids have grown, my "supposed" to is almost over. I am filled with an almost breath ...
