Cooking When Oven Explodes!
What do you cook when your oven explodes?
Yep, my oven quietly exploded, shot some flames and sparks, and died. He'd been a part of the family for several years and part of another family before that, so I guess it was just his time to go. Now, what do I cook for dinner using only a stovetop? Of course, we know how to cook many side dishes on the stove top, but is meat any good cooked that way? I say, Yes! I've included my favorite meat recipes below, for you to try and share. Let me know how they turn out for you AND if you and your family enjoyed them.
My favorite is:
Sweet and Spicy Chicken
4 boneless chicken breasts, flattened with a meat mallet
1 ½ tsp. pink Himalayan salt
1 tsp. black pepper
1 ½ tsp. paprika
½ tsp chili powder
3-4 Tbsp. white sugar
1 ½ tsp. garlic powder
1 ½ tsp. onion powder
1 ½ tsp. dried parsley
2 Tbsp. butter
1 Tbsp. olive oil
Juice of a lemon
In a pie plate or dish, combine all ingredients.
In a pan on stove, heat butter & olive oil over medium (olive oil helps the butter not burn).
Coat both sides of chicken breasts with mixture.
Add chicken to pan and saute each side about 5-6 minutes. Do not flip chicken until done on 1 side. Continued flipping will cause the spicy coating to fall off the chicken.
While cooking, squeeze the lemon over the chicken.
Sometimes, I'll add a few more sprinkles of sugar over the chicken, while cooking. The sugar adds the sweetness and is a nice balance for the spicy.
Enjoy with rice, pasta, or a baked potato! Yum!
Rosemary Garlic Butter Steak
4 steaks, 1-1 ½ inches thick
3 cloves garlic minced
2 Tbsp rosemary minced
1 Tbsp oregano minced
3 Tbsp butter
Salt and pepper
A splash of your favorite wine
Heat a skillet over medium heat and melt butter. Rub the garlic, rosemary, and oregano over both sides of steak. Add steaks to the skillet, season with salt and pepper, and cook 2-3 minutes on each side. Add the wine and extra garlic or rosemary, if you wish. Cover and watch it steam. Cook for 3-4 minutes more, remove steaks, and let stand for 5 minutes. Cook the wine and seasonings until reduced, slice the steaks, and pour wine sauce over steaks. Serve and enjoy!
Easy Breaded Chicken
Boneless chicken breasts, thin
Panko crumbs
Garlic, minced
Salt and pepper
Parsley
1/4 cup Parmesan cheese
Olive oil
Pour enough olive oil in skillet to cover bottom. Heat pan on medium. Mix a good amount of bread crumbs, garlic, salt, pepper, parmesan cheese, and parsley in a bowl. Make sure to stir it up. Pour a little oil in another bowl. Dip chicken into oil. Drip excess oil off and immediately put into breadcrumb mixture. Coat chicken well and place into skillet. Cook 4-5 minutes each side. Do not continuously flip during cooking, as coating will fall off. Serve and enjoy! (The remains in the pan makes excellent gravy!)
